Urap Urap (Veg with spiced grated coconut)
This is an Indonesian dish generally with steamed veg and spiced grated coconut. Live & Let Eats version takes it up a few notches to really enhance the flavours of the individual vegetables and ingredients. So this recipe has roasted, steamed and raw vegetables. The coconut has been toasted and a few extra ingredients have been added to the coconut "dressing". Its very easy and so cheap to make. Serve as a side salad or as a main. This dish can be made vegan just by leaving out the shrimp paste.
Any vegetables can be used. Just think of what the season is and use whats in season.
Mix through poached chicken or seafood to make into main dish.
Coriander root is the very bottom of the coriander plant. The actual root. Make sure you wash them thoroughly. If there are no roots finely chop the stalks.
For vegan keep out the shrimp paste. It will still taste great.
If you don't have palm sugar use light brown sugar.
