Torta de chilaquiles

This is the ultimate Mexican breakfast sandwich. Freshly baked crispy telera roll, chorizo, chilaquiles, cheese, fried egg, coriander, pickled onion, sour cream and refried beans. Perfect starter to the day. 

Chilaquiles are tortillas (generally stale) that are cut into pieces then fried until crispy and then briefly cooked in a red or a green salsa. Usually served for breakfast with eggs and other accompaniments.

Serves 4

Quick pickled onion recipe.

Pan telera recipe. Any crispy roll or bun would be fine.
