Spicy sumo stew (Chanko nabe)
This one pot wonder is dish of choice to sumo wrestlers. They often eat chanko nabe to put on weight. Dont worry this is reasonably healthy, rich in protein, spiked with kimchi and very comforting. Perfect for the winter that is knocking on the door. Or if you fancy becoming a sumo wrestler you will need alot of this dish!
A spicy dashi broth with miso chicken meatballs, kimchi, spongy tofu, vegetables and noodles.
Dashi. Dashi stock powder or Dashi "teabags" can be brought from most Asian supermarkets or any Japanese supermarket. Alternatively you could buy kombu tsuyu which is a premade soup base. Available in Japanese supermarkets.
Puffed tofu is also available in Asian supermarkets. Deep fried bean curd that has gone all spongy inside and will hold its shape in the stew. They also soak up the broth becoming these super juicy morsels.
