Roti John

Roti John

Roti John is a common street food sandwich found in Singapore, Malaysia and Brunei. It's not the usual round flat roti. It basically a long roll cut lengthways and has egg and some form of meat cooked into it. Then topped with a bunch of goodness. Kinda like "Asian style French toast" but savoury. In the pic is a bacon roti john and a sardine roti john which are both super quick, cheap and easy. Perfect for breakfast, brunch or lunch! 

Serves however much you want it to!

Notes...

For the meat filling. I have used bacon and sardines. Other options could be cooked chicken mince, cooked lamb mince, cooked beef mince, canned tuna, spam the options are endless. Or go vegetarian with chopped mushrooms, spring onion, diced capsicum etc etc.

Toppings are also endless. I have used fresh chilli, pickled onions, coriander, hot sauce and kewpie mayo. Also slaw, lettuce, jalapenos, fried shallots, pretty much any sauce etc etc. Get creative. Look in your fridge/pantry and make a killer sauce.
