K-Mac n cheese

Here is my version of mac n cheese. A mash up between American-Korean-Japanese. Instead of using macaroni I have opted for these thick Korean rice cakes usually used in the dish tteokbokki. As for the liquid component I used a dashi broth with a touch of milk. Sounds like it wouldn't work? Well its bloody good and full of umami. Serve with a little bit of kimchi on the side to help cut through the richness.

Notes...

You can find the rice cakes at most Asian stores. Korean stores should definitely have them. The name for them is tteokbokki. If you can't find them you could use ramen noodles or even just classic macaroni.

Recipe for the dashi broth just buy instant dashi from the Asian supermarket.

Furikake is a Japanese rice seasoning found in Asian supermarkets.
