Pulled eggplant, lentil & black bean chilli
The only vegetarian/vegan chilli recipe you will ever need. Take that trip down to the specialist Latin supermarket and pick up some of these more authentic ingredients and take your average chilli from not bad to bad ass. This recipe uses dried mulato chilli which is a commonly used chilli in Mexico. Its sweet and low in heat.
Pulled eggplant has made an appearance on L&LE before. Its a great way to have a "meat" like texture in a vegetarian dish.
Serve in tacos, burritos, nachos or with rice etc etc
For the best results cook the eggplant directly on hot coals. Alternatively roast in oven at 220 degrees celsius until fully cooked through.
