Hi.

Welcome to Live & Let Eat. A place where I document recipes I've made based around simple food that kicks butt. Have a nice stay!

Bukkake udon

Bukkake udon

Ok so this isn't what your thinking! Get your mind out of the gutter! This is actually the name of a Japanese dish. Meaning cold udon noodles in a cold broth. A really light and refreshing dish on a hot summers day.

Serves 2

Notes...

For the dashi broth you can buy a powered version which you just add water. Follow instructions on packet. Buy from Asian supermarket.

Katsuobushi are smoked dried bonito flakes. Great for adding into broths or using as a topping for noodles, soups, stir fries, okonomiyaki etc etc

Toppings. In the picture I have used spring onion, red pickled ginger, katsuobushi, furikake, egg yolk, dried seaweed. Other good toppings could be finely sliced vegetables, finely sliced meats, soft boiled egg, tempura coated things and pretty much whatever you want. Bukkake those noodles.
