Super quick and easy. Great to have on sandwiches, burgers or salads.
What you need...
1 telegraph cucumber or 2 Lebanese cucumbers
50 ml rice wine vinegar
1 tablespoon caster sugar
1 tablespoon gochugaru or chilli flakes
1/2 teaspoon salt
Juice of half a lemon
What you do...
One. Slice cucumber nice thin.
Two. Mix rest of ingredients until sugar and salt has dissolved. Add cucumber and toss well.
Three. Place into jar. Leave at least 2 hours before eating. Will last up to a 3 weeks in fridge.
