Mexican for breakfast is a very very very good idea. Cheap, fresh and super easy. Guys get up and make your lady breakfast!
What you need...
200g refried beans
4 mini tortillas (6")
150g grated cheddar
1 green pepper (capsicum)
Half ripe avocado
Zest and juice of 1 lime
Half bunch coriander chopped
20g sliced pickled jalapeno
2 tablespoons of pickled jalapeno brine
1 tomato seeded and diced
1/4 red onion finely diced
What you do...
One. Preheat oven to 180 degrees celsius.
Two. On each of the tortillas spread the refried beans evenly all over then sprinkle with cheese. Place one on top of the other to make a double decker and do the same for the other tortillas. Place on a baking tray and bake for 10 mins or until hot and crispy.
Three. For the green sauce place the green pepper over a gas flame to cook and blister the skin. Once pepper in soft and skin is charred peel skin off with hands and discard seeds inside just keeping the flesh. In a food processor add pepper, avocado, lime zest, lime juice, half the coriander, jalapeno and jalapeno brine then blitz. Season.
Four. For the salsa mix together the tomato, red onion and the rest of the coriander.
Five. Fry eggs to the way you like them. Keeping the yolk runny makes a nice sauce.
Six. To assemble place tortilla stack on plate topped with eggs, green sauce and salsa.
