Meat inside bun. Add some smoked cheddar and bake. Oh lordy! These little bad boys are perfect to taking away on missions like a road trips, picnics or take them to your mates BBQ and heat in the oven for ten minutes before serving. Hot or cold these are great. Serve some form of pickle with them and wash down with loads of beers.
What you need...
250g beef chuck thick dice
One onion finely chopped
One chipotle chilli (or any chilli)
2 cloves of garlic
1 litre beef stock
Coffee & chipotle bbq sauce (recipe link below)
150g grated smoked cheddar
2 1/2 cups wholemeal flour
1 pack dried yeast (7g)
1 cup warm water
2 teaspoons baking powder
1 tablespoon caster sugar
1 tablespoon veg oil
good pinch of salt
Plain flour for dusting meat and bench for kneading
What you do...
One. Lightly toss diced beef in plain flour and shake off excess. Brown off in a hot heavy based pot. Add onion, garlic, chilli and beef stock. Bring to boil then reduce heat and simmer for approx 2 1/2 hours or until meat is tender.
Two. Remove meat from pot and let cool. Reduce liquid right down until it becomes nice and thick. Season. Set aside.
Three. Once meat has cooled pull apart with hands. Add a splash of bbq and enough of the reduced sauce to nicely coat meat. Set aside.
Four. For the buns. Activate the yeast and warm water by combining and leaving for 5 minutes.
Five. Combine wholemeal flour, baking powder, sugar, veg oil and salt.
Six. Add yeast mixture with flour mixture. Combine and knead on floured bench for approx 5 minutes. Put into oiled bowl and cover with a damp tea towel. Leave in a warm spot for 45 minutes until dough has doubled in size.
Seven. Once dough has doubled in size take out of bowl and divide dough into 8 even pieces. Roll each piece into a smooth ball and place on oiled tray. Cover with tea towel and leave for 15 minutes until balls have risen a little.
Eight. For each dough ball place both thumbs into dough and create a bowl shape. Place a tablespoon of the meat mixture and a cheese disc into dough. Pull over one side of dough over the meat and cheese to cover up hole. Then pull dough on opposite side over and continue until bun is fully wrapped.
Nine. Place stuffed dough onto a oiled tray and sprinkle with grated cheese and bake in a pre heated oven at 190 degrees celsius for 15 minutes or until golden brown.
