Spit roast pork, amaranth tabbouleh, gochujang mayo pita wraps

Now that summer is here its time to crank up those hot coals and pull out the rotisserie. Make sure a got plenty of time on your hands. This was going to be a lamb spit roast but seen an awesome special on pork leg roasts. So it's pork! You can pick up rotisseries pretty cheaply from home & garden shops, bbq shops well they are actually quite available. All you need is time, hot coals or most these rotisseries can attach to your barbeques. Using coals will produce a better taste. I have matched this with amaranth tabbouleh, a spicy gochujang mayo all wrapped up in homemade pita's.

Serve size depends on how big ya piece of meat is!

Notes...

You could easily change pork with a rolled boneless lamb shoulder or leg.  Or even a whole chicken.

Amaranth is like a small quinoa. If you cant find use quinoa or the traditional cracked bulgur wheat for the tabbouleh.
