Spicy mango spatchcocked chicken

Barbecuing a whole chicken is easier than you think! Spatchcock that sucker which will give it more of an even cook. To "spatchcock" means removing the backbone of the bird and flattening. With a few added skewers to keep her from flopping about. Marinated in this spicy mango marinade gives it a fresh fruity taste for a summer bbq.

Serves 3-4

Notes... 

  • To check it is cooked poke a skewer into the thickest part of the chicken preferably next to the bone and if clear juices pour out its good and if they pink keep cooking.
