Miso & lemongrass chicken with ssamjang sauce lettuce wraps
The idea of this dish came from the Korean dish Bo ssam which traditionally uses boiled pork neck wrapped in lettuce leaf. Now using chicken thigh takes way less time and you can still create epic flavour. With my one here i have sided the chicken with ssamjang sauce, peanut & spring onion sauce, crisp shallots, gochugaru brown rice and chilli carrot & daikon pickle. Looks like there is a lot of ingredients but dont let that put you off. This is a super easy dish to prepare and is great for sharing.
This dish is fun and excellent for sharing. Try using different meats like pork, beef, lamb or even seafood like prawns or your favourite fish. Even for vegetarians slap in some char grilled vegetables like zucchini, mushrooms, capsicums etc.
Gochujang, ssamjang and gochugaru can be found in your local Asian supermarket. Get yourself down there and stock up in some weird and wonderful foods.
