Cast iron bacon & jalapeno cornbread

This easy moist cornbread is a great side kick just like Robin is to Batman. Well it's got a way better kick than Robin! Kazaam! Serve this with breakfast along side some nice smokey beans and eggs or with lunch/dinner with some pulled meats or stews. Or eat it straight out the oven with some chipotle butter like in the pic. Best eaten straight away. I have used a mini cast iron pan which this recipe makes 3 batches or use a large cast iron pan for one bad ass cornbread.

Serves 4-6

Notes...

In the picture it has chipotle butter on top. In a food processor chuck in some canned chipotle chillies and softened butter and blitz. Chipotle butter.

For a vegetarian option just keep out the bacon. Use a bit of veg oil with butter as a replacement for the bacon fat.
